SOY, GINGER & BALSAMIC VINEGAR OF MODENA SAUCE
The new Ginger Soy Sauce & Balsamic Vinegar of Modena blends wonderfully the sweet notes of Balsamic Vinegar of Modena with the decided flavours of ginger marinated in soy sauce. The Soy sauce that we use in the composition of our Specialty is produced by the wheat, as in the Ancient Japanese tradition, this tends to give the outset to prepare a slightly sweet taste that blends well with the soft tones of Balsamic Vinegar of Modena. The ginger gives to the sauce a distinctive aromatic flavour, but also works as a stimulant for the digestion and enhances the flavours of the dishes associated with it. The preparation of this Specialty is complex and is achieved by preparing at a cold processing, using only pure and natural ingredients. The base is formed by a delicious Balsamic Vinegar of Modena, a blend of cooked musts of selected grapes and better wine vinegar, plus below the soy sauce and ginger obtaining a soft and creamy sauce but with a strong flavour and an intriguing taste of Soy and Ginger. The aroma is delicate, with a strong note of ginger. The colour is dark, bright, sweet and sour taste, with pronounced soy flavour characteristics. The only thickener ingredient is the natural rubber of xantamo, added in processing in a minimum percentage, nothing else. We do not use starches, caramels, colourings agents, but only our excellent ingredients and all the experience of our centuries-old tradition. It ‘s always advisable to use the sauce as a cold Condiment. Excellent on all fried and dishes of fish,fresh, boiled and grilled. Add flavours and enriches the taste to salads and fresh vegetables, as well as to grilled or cooked on the hotplate carrots, onions and potatoes. It is commonly used as a condiment on meat sauces and on fresh cheeses too. And it’s exquisite on all dishes based on rice or as a wonderful ingredient for preparations by marinades.
Colour: black with amber brown, shiny.
Aroma: The smell is heightened, intense and fresh, with major accents of ginger and soy.
Flavour: softly fruity, pleasantly sour, with predominant flavour of ginger and soy sauce.
Density: creamy, slightly stringy, shiny and very gripping.
Ingredients: Condiment (cooked grape must, wine vinegar) 46%, Soy sauce 35% (water, soybean, wheat, salt 14.6%), Balsamic Vinegar of Modena (Cooked grape must, Wine vinegar) 10%, Ginger 6%, sugar, thickener xanthan gum.
