The flavours and bouquets in each barrel are constantly controlled by our Master Vinegar Makers. The decanting of Balsamic Vinegar of Modena in refining from the largest to the smallest barrel, is the most challenging task of the year.
The last barrel of the series, the smallest, is the one from which we draw our Balsamic Vinegar of Modena, but only in small quantities so as to avoid emptying it completely. Thus, it must always remain more than half full. In this manner, each cask conserves the precious nucleus of the oldest product within.
This ancient tradition and timeless passion projects towards the future and gives birth to unique and rare products. Our filling lines are fully automated and able to ensure an average production of 6000 bottles per day The production is made to the highest standards of quality and is constantly monitored by our laboratories.
The flexibility of our production lines allows the most rapid changes in products and format.
